Zero-guilt Healthy Ice Cream - Raw cream, duck eggs, & honey!!
An oldie but a goodie from a few years ago…
Boy, Oh Boy, are we having some HOT weather?!?!
We put 4 racks of hay away last week in that blistering heat. Thank goodness my brother and his teenage grandson were visiting.
We know exactly how to entertain our guests... “Get your gloves on sucka, we’re puttin’ hay in the haymow.”
I can tell you, the words “LAST BALE” have never sounded so good.
We are also in desperate need of rain here, how ‘bout you?
The pastures are stunted with no rain, so that means no grass for the cows and goats, hence all the hay buying..
Anyhoo, there’s also nothing better after sweating your last drop of sweat, than a heaping bowl of homemade ice cream to cool you down.
Except maybe the pool, but I’m not letting those gross sweaty people jump in there covered in hay no matter how hard they worked.
So ice cream it is!
With this recipe, you can use many different variations to get it the way you like it.
Homemade Raw Milk Ice Cream (modified 2024 to fit in a KitchenAid ice cream maker)
Make sure to follow your ice cream maker's directions, like freezing the container overnight or whatever it calls for.
3 Hoffman’s Little Acres Chicken Egg Yolks (or 2-4 duck egg yolks)
3 c Hoffman’s Little Acres Raw Cream
1/2-3/4 c Hoffman’s Little Acres Raw Honey (for carnivore),
Other sweetener options that are not carnivore.. Hoffman’s Little Acres Maple Syrup/Maple Sugar (when in stock), or just plain old white sugar.2 tsp vanilla *optional, omit if truly carnivore*
Pinch of salt (optional)
Mix all ingredients in a bowl with a mixer or stick blender (immersion blender).
Pour into your frozen ice cream maker and follow the manufacturer’s instructions.
We use an old crank ice cream maker, nothing but the hard way around here… Ice, Salt, and lots of cranking. Once you can’t turn the crank, it’s done.
Good thing we have lots of people in house to broaden the workload. And, bonus, we get bulging biceps!
UPDATE: I've since upgraded to the ice cream attachment for my KitchenAid. It’s amazing!!
As the kids move out I don't need to wear myself out hand cranking ice cream.
NOTE: The duck egg yolks make this ice cream very creamy and rich and yellow and yummy! We don’t cook this, we still eat raw cookie dough with raw eggs here…
But if you feel the need, you’ll have to warm the milk and temper the yolks so you don’t get scrambled eggs in your ice cream.
Top with your favorite toppings, syrups or honey, add chocolate powder or fruit to change the flavor, the possibilities are endless.

Carnivore Ice Cream (no sugar)
Ingredients
- Freeze your ice cream maker container first
- 4 Hoffman’s Little Acres Chicken Egg Yolks (or 3-4 duck egg yolks)
- 4 c (1qt) Hoffman’s Little Acres Raw Cream
- 2 c Hoffman’s Little Acres Raw Milk
- 1 c Hoffman’s Little Acres Raw Honey (for carnivore). Other sweetener options that are not carnivore, Hoffman's Little Acres 100% Maple Syrup/Maple Sugar (when in stock), or just plain old white sugar.
- 2 tsp vanilla *optional, omit if truly carnivore*
- Pinch of salt (optional)
Instructions
- Mix all ingredients in a bowl with a mixer or stick blender (immersion blender).
- It's best if you refrigerate your ice cream mixture for a few hours before churning, but not completely necessary.
- Pour the cream mixture into frozen ice cream maker and follow the manufacturer’s instructions for salt, ice, and churning directions.
Notes
Variations:
- Chocolate: Add 1 cup cocoa powder AND increase your sweetener by 1/4c.
- Fruit: Puree and add 2 cups of your choice of fresh fruit AND 1/4c extra sweetener
